Although I wanted to keep my posts to simple recipes and pictures, I wanted to share what I made today and the recipe to go with it! I know the majority of college students –well at least the ones I know– do not like fish. However, I love fish, especially salmon. I discovered this recipe one day while babysitting when the mother informed me that she wouldn’t be home in time for dinner, and to make the children salmon using the recipe she had hanging on the refrigerator. It is very simple to make, and once you have the ingredients you can use them multiple times after for different recipes or this one. This will save you a lot of money and its simple, perfect for a college student!
Personally, I added caramelized onions to it, with a side of mashed potatoes and a side salad which really completed the meal!
Ingredients:
*Note this recipe makes 2 servings, so you can share with a friend!*
- 2 tablespoons brown sugar
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoons lemon pepper (If you can’t find this in the store, use pepper and a lemon. This swap worked just fine for me!)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley
- 1/4 teaspoon garlic powder
- 2 (6 ounce) salmon fillets
Directions:
1) Whisk together the brown sugar, olive oil, soy sauce, lemon pepper, thyme, basil, parsley, and garlic powder in a bowl, and pour into a resealable plastic bag (or any desent sized bowl). Add the salmon fillets, coat with the marinade, squeeze out excess air, and seal the bag (or bowl). Marinate in the refrigerator for at least 1 hour, turning occasionally.
*Steps 2 & 3 are for people with a grill, but if you don’t have a grill like we didn’t, skip over these steps.*
2) Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove the salmon from the marinade, and shake off excess. Discard the remaining marinade.
3) Grill the salmon on the preheated grill until browned and the fish flakes easily with a fork, about 5 minutes on each side.
For people who only have an oven:
2) Place marinated salmon into a medium baking dish and cover with any extra marinade.
3)Preheat your oven to about 350 degrees F.
4) Cook for about 15-20 minutes until fish flakes easily with a fork.
